This restaurant was already past its peak, as it was picked up by the Champagne group Taittinger at just the right time. Chef Guy Martin was brought in to give the restaurant the much-needed breath of fresh air.
This creative chef always has a sketch-pad at hand, to record spontaneous recipe ideas. “Painting is my most important source of inspiration. I cook, just as others paint.” With this strategy, the virtuoso exceeded all expectations and has secured the restaurant its third Michelin Star. Apart from the phenomenal food, the location is perfect: directly under the arcades of the Palais Royal.
A tip: If you fly to Paris, book a table on the very same day, otherwise you will have no chance of experiencing the wonders at this connoisseur's palace.
